Ingredients:
2 long Aubergines
1/4 teaspoons turmeric powder
Olive oil, to coat Aubergine slices

Salad:
4 tablespoons shallots, sliced
1 green chili sliced
120 g cherry tomatoes, halved
1 teaspoon lime juice
Salt, to taste
Black pepper, to taste

Directions:
1. Preheat your air fryer appliance to 180 C.
2. Cut the two Aubergines into 1 cm thick slices.
3. Rub the Aubergine slices with 2 teaspoons of oil and turmeric.
4. Place these slices in the air fryer basket and the air fryer for 10 minutes.
5. Flip the slices once cooked halfway through.
6. Mix the rest of the ingredients in a salad bowl.
7. Top this salad with air-fried Aubergines.
8. Serve.
