Buffalo Cauliflower Tacos

Preparation time: 10 minutes.
Cooking time: 18 minutes.

Ingredients:
Buffalo cauliflower bites:
1 head of cauliflower, cut into bite-size florets
45 g plain flour
3 tablespoons corn flour
280 g buffalo sauce
½ teaspoon garlic powder
½ teaspoon cayenne powder
2 tablespoons olive oil
120 g water
Coriander-avocado sauce:
1 handful of coriander, chopped
2 avocados, diced
1 jalapeno, chopped
45 g coconut cream
Salt and black pepper to taste
Tacos:
8 tortillas
1 lemon
Coriander, to garnish
240 g coleslaw
Directions:
1. Blend avocados with coriander, jalapeno, coconut cream, black pepper, and salt in a blender until smooth.
2. Mix flour with 1 tablespoon of buffalo sauce, garlic powder, water, cayenne powder, and corn flour in a bowl.
3. Add the cauliflower florets to the flour batter, then coat well.
4. Place the florets in the air fryer basket and drizzle cooking oil on top.
5. Air fry them for 15 minutes in batches.
6. Brush the remaining buffalo sauce on top of the florets.
7. Continue air frying them for 3 minutes.
8. Divide the cauliflower florets, coleslaw, and avocado sauce on top of the tortillas.
9. Drizzle coriander and lemon juice on top of the cauliflower florets.
10. Roll the tortillas and serve.
