Kale salad:
400 g baby kale, chopped
400 g romaine lettuce, chopped
100 g shredded red cabbage
Black pepper and salt to taste
1 teaspoon olive oil
1 tablespoon lemon juice
Polenta croutons:
450 g of cooked polenta
1 sprinkle of kosher salt
1 sprinkle of black pepper
1 sprinkle of creole seasoning

1. Mix all the salad greens in a salad bowl and keep them aside.
2. Mix polenta with salt, black pepper, and creole seasoning in a bowl.
3. Spread the polenta in a 6 inches round pan (or any size suitable to fit into your air fryer basket)
4. Preheat your air fryer appliance to 200 C.
5. Air fry the polenta for 12 minutes then cut it into cubes.
6. Top the prepared salad with polenta croutons.
7. Serve.
